Chipotle Chicken Copy Cat Recipe
Equipment
- 2 Spatulas
- 1 Blender or Food processor
Ingredients
- 8 Chicken thighs, boneless skinless
- 1 tsp Cumin
- 4 whole Garlic cloves
- 1 tsp Dried oregano
- 2 tsp Kosher salt
- 1 tsp Black pepper
- 1 tbsp Chillie powder
- 2 tbsp Olive oil
- 1 7 oz can chipotles is adobo only use 4 peppers and all the sauce
- 1/2 Cup Water
Instructions
- Put everything except the chicken into a blender and mix together.
- Add your newly blended marinade to the chicken in a ziplock bag and put in the fridge overnight or 8 hours.
- Preheat your griddle to 400 degrees. Place your chicken on the griddle and add salt.
- Cook for 6-8 minutes untouched. Flip and cook for a few more minute or until it reaches an internal temp of 175 degrees.
- Remove from the griddle, let it rest for 5 to 10 minutes then dice and serve.
