Bacon Fried Corn

Bacon fried corn is a must make for any blackstone griddle owner.

Equipment

Ingredients

  • 1 Lb thick cut bacon diced
  • 2 lbs frozen corn
  • 1 Tbsp diced garlic 3 cloves
  • 1/4 cup cilantro chopped
  • 2 limes
  • Salt and pepper or Tajin seasoning
  • Cojita Mexican crumbling cheese
  • 1 bag Tortilla chips or Cheetos
  • 3 tbsp Mexican table cream
  • Hot sauce

Instructions

  • Make sure you dice up your bacon before putting it on the griddle.
  • Preheat griddle to 375-400 degrees.
  • Place bacon on the griddle while it is preheating. Cook it until it's crispy, tossing regularly.
  • Scrape off most of the bacon grease, then add the frozen corn. Toss the corn, coating it in bacon grease then spread it out and let it sit for 3 minutes.
  • Flip the corn and cook the other side for another 3 to 5 minutes.
  • Turn off the griddle then add your Tajin seasoning and chopped cilantro. Mix it all together and remove it from the griddle.
  • Top it with the queso fresco, Mexican Crema, Cheetos, lime and hot sauce.
  • This was also great with tortilla chips. I would substitute that instead of Cheetos next time.
  • This is great as a side dish for taco night on the griddle.
