Make sure you dice up your bacon before putting it on the griddle.
Preheat griddle to 375-400 degrees.
Place bacon on the griddle while it is preheating. Cook it until it's crispy, tossing regularly.
Scrape off most of the bacon grease, then add the frozen corn. Toss the corn, coating it in bacon grease then spread it out and let it sit for 3 minutes.
Flip the corn and cook the other side for another 3 to 5 minutes.
Turn off the griddle then add your Tajin seasoning and chopped cilantro. Mix it all together and remove it from the griddle.
Top it with the queso fresco, Mexican Crema, Cheetos, lime and hot sauce.
This was also great with tortilla chips. I would substitute that instead of Cheetos next time.
This is great as a side dish for taco night on the griddle.
